Spiced Jumbo Collins

Spicy Friday cocktail by Martin Bilsboroug, head bartender at Gotham Manchester:

We find ourselves not just in Manchester, United Kingdom, but above it. Towering above King Street is the magnificent art building that houses Hotel Gotham. It is at the very top of this tower that the bar can be found.

Martin Bilsborough, Head Bartender, has created for us the perfect twist on the Tom Collins, riffing of the subtle complex balance between spice, aromatic and sweet notes found in Elephant Gin.

Spiced Jumbo Collins

40ml Elephant Gin
10ml Cointreau
25ml Lemon juice
10ml Chili sugar syrup 
Top Fentimans Ltd Ginger Ale

Method: Shake and fine strain into large highball over ice. Top off with Ginger Ale. Garnish with fresh mint and slice of lime.

Perhaps, however, the most intriguing ingredient to this cocktail is the chili sugar syrup, as Martin explains; “The small amount spice the chili sugar syrup holds quite a lot of flavor, which works with the overall composition and balance of the drink.”
